PICK-A-FLAVOR MUFFINS


Nothing is quicker or easier on a busy morning than popping a baked muffin out of the freezer and warming it in the microwave for a few seconds as your spouse or kid's dash out the door.  I bake muffins regularly and keep them individually wrapped in a sandwich bag for the kids to grab, warm and go.  I have several recipes but this one is great because of  it's versatility. It's great if you have an abundance of some fruit or vegie to use up. 

Feel free to play with the spices and toppings depending on the type of muffin you make.

Pick-a-Flavor Muffin Recipe

Ingredients
1 cup flour *
3 T canola oil **
1/3 cup sugar
2 eggs
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup mashed or grated fruit or veggie ***See ideas below!
1/2 cup chopped nuts (optional)
Directions
1. Preheat oven to 350.
2. In bowl, combine eggs, oil, sugar and mashed fruit or veggie. Whisk. Mix well.
3. Add flour, baking soda, baking powder and cinnamon. Mix until it forms into batter. I use my hand mixer beaters. Add nuts if you like.
4. Pour into muffin cups
5. Mini muffins Bake 8-10 minutes. Regular muffins: Bake 15-2o minutes. Tops will turn golden. 6. Cool on cooling rack and then serve to hungry little people!

 PICK-A-FLAVOR OPTIONS:Fruits and Veggies mashed banana,  grated applesquash grated carrots (add 1/2 cup raisins if you like), peeled and grated zucchini, blueberries,  cranberries, peaches, apricots, pumpkin purree, or
 for bacon-broccoli-cheddar muffins: 1 c shredded cheddar
1 (10 ounce) box frozen chopped broccoli, thawed and drained
1/2 c diced cooked bacon or bacon bits

These freeze beautifully! Thaw in just 10 seconds in the microwave, or in a few minutes on the counter.

FUN TOPPING IDEAS to put on BEFORE BAKING
These recipes are for 12 muffins and should be put on before baking.
Muffin Master Mix toppings: Note that there are 2 kinds of streusel topping recipes:Streusel Crunch and Traditional Streussel

Streusel Crunch Topping



2/3 C. flour
½ C. walnuts or pecans, finely chopped
2/3 C. brown sugar
½ C. oatmeal
½ t. cinnamon
½ C. butter, melted.
Mix dry ingredients and pour melted butter over the top and mix with a fork until resembles course crumbs.

Traditional Streusel Topping

1 C. sugar
½ t. cinnamon
2/3 C. flour
½ C cold butter

Mix together sugar, cinnamon and flour. Cut cold butter into dry mix until mixture is fine and crumbly.

Cream Cheese Topping

8 oz. Cream cheese, softened
1 t. vanilla
½ C. sugar
1 egg
Using an electric mixer, whip cream cheese, sugar and vanilla until smooth. Add egg and whip together until just combined. This will solidify like a cheesecake on the muffins.
