Bacon Ranch Potato Salad

Want a super easy potato salad recipe that is different the usual? This one,  with only 4 ingredients and served warm, will guarantee you compliments and recipe requests!  I have never taken it anywhere without bringing along a few printouts of the recipe to hand out (although you may want to keep this one your secret weapon, and not tell!) 

Loaded Potato Salad
My Mother-in-law introduced our family to this recipe almost 20 years ago, and now it is a staple at every family cookout or gathering. I'm giving you the family sized recipe, If you are taking it to a cookout you'll want double the recipe, this'll be the dish they keep coming back for seconds of!

Jan's tip: A 5 lb. bag of red skinned potatoes usually has about 12-14 potatoes so when I'm doubling the recipe I just cook up the whole bag.   

Being the cheese-a-holic that I am, tried adding shredded cheese to it over the years to make it more of a "loaded potato salad" but honestly, the simplicity of the original 4 ingredients is perfect, but feel free to play around with add-ins's.

Bacon Ranch Potato Salad
4 Ingredient Warm Potato Salad that is loaded with flavor. I buy a 5 lb. bag (has 12-14 potatoes) when I double the recipe.
Ingredients
  • 6-8 Red Skinned Potatoes - Large ones
  • 1/2 lb.. Bacon cooked crisp and crumbled
  • 3-4 green onions, green parts chopped
  • 1 (16 oz) bottle bacon ranch or ranch dressing
Instructions
Boil potatoes (keep skins on) till cooked through.
While potatoes are boiling, cook bacon till cooked crisp and crumble.
Drain potatoes and place in large bowl. Mash lightly with a potato masher.
Stir in bacon and green onions.
Stir in 1/2 of the bottle of dressing. Mix well. Decide if you want to add more dressing. Remember the potatoes will continue to absorb some of the dressing, so you may want to add most of the bottle. to desired consistency.
I add most of the bottle and then refresh the salad with the remaining amount just before serving. Serve warm.
Yield: 6-8 Servings

    1. My personal preference is it loses a little something the next day, cold. Having said that, it has never stopped me from taking it to work for lunch and reheating it just a bit! Still great, but I do prefer the fresh salad over the left overs. My husband loves it anyway he can get it.

    What an awesome and easy sounding recipe! I am the only one at my home that will eat potato salad so the ease of this really appeals to me and I will just share with whoever would like a bit. I make a loaded potato salad that is too die for with the cheese an all but this would really be great to whip up most anytime.
