This warm soup is perfect to throw into the crock pot before work and come home to on a chilly evening. It is not only a thrifty dinner, it is made with simple ingredients that don't require much prep work at all, so you can literally throw it together just before walking out the door! (It's practically a dump soup, because you can dump the ingredients in the crock pot, turn it on low and dash out the door!) I found my inspiration for this recipe from my trusty church cookbook, but also found the same recipe at the thrifty groove blog, which I have come to enjoy, so wanted to give them a shout out!
Jan's tip: It is great as is, but you can play around with it too! I put some suggested add-in's in the ingredient list for you to think about!
Crock Pot Potato & Corn Chowder
Ingredients:
1 (16 oz) bag frozen diced hash brown potatoes
1 (15 oz) can white corn drained
1 (15 oz ) can creamed corn
1 (12 oz.) can evaporated milk or make your own!
1 lb. kielbasa sliced into bite sized pieces or diced, cooked ham (lunch meat is fine!)
1/2 Tblsp. Worcestershire sauce
Salt & Pepper to taste
Optional add-ins: Can of Cream of Mushroom or Chicken Soup, chopped onions, 2 Tablespoons butter, parsley flakes, sour cream, diced carrots, diced celery, 1 can chicken broth.
Directions:
Dump all ingredients in crock pot and mix together. Cook on LOW setting for 8 hours. Serves 4-6
What would you add in to your soup?
