Cobb Salad

Cobb Salad is a delicious way to use leftover rotisserie chicken or chicken tenders and turn it into a light, yet hearty lunch or dinner. It is my families favorite!

when ever we have a bit of rotisserie chicken leftover or I cook up chicken tenders, I always cook a few extra to make this salad.

A traditional Cobb salad usually has hard boiled eggs, chicken, bacon crumbles, and tomatoes mixed with your iceberg lettuce and other greens.

I also toss in bits of this veggie or that depending on what is in my fridge. Raw yellow squash or broccoli are not uncommon.

Cobb Salad:

Layer in a bowl:
Greens: Chopped Iceburg, spinach or other lettuces:
Veggies: Wedged or diced tomatoes, small broccoli florets,
Toppings: Layer diced chicken, crumbled bacon, hard boiled eggs, sprinkle of cheddar cheese.

Serve with your favorite dressing.
