Barbecue, Bacon & Cheddar Stuffed Sweet Potatoes #InternationalBaconDay


 This dish is great for a lunch or a dinner, and you can easily make if from left over pork bbq or even from left rotisserie chicken. Bbq Cheddar & Bacon Stuffed Sweet Potatoes are so flexible!
 You can even put a few chicken breasts in a crockpot with bbq sauce all day and come home to put this dinner together. I love the flexibility!


Today I used leftover pork bbq for mine, and it is a family favorite way to use up bbq when there is a little bit left, and we are "sandwiched" out. no one complains when I put these on the table!
Sweet Potatoes

Feel free to just play around with the idea, both in ingredients and the baking, but I'll share with you how I put mine together. I often will do a combination of using the microwave and my oven to pull these together. But you can do all oven, or all microwave too.

Barbecue Cheddar & Bacon Stuffed Sweet Potatoes:
Serves 4

Ingredients:

4 Sweet Potatoes
2 Cups Bbq pork, beef or chicken
1 cup shredded cheddar cheese
4 slices bacon cooked crisp and crumbled

Directions:
Clean sweet potatoes under running water and pierce with a fork.
Bake potatoes in microwave till cooked through according to time recommended for your microwave.
Preheat Oven to 400°
In 9 x 13 baking dish place potatotes.
Cut open tops of each potato and lightly spread open each potato just a bit.
Place 1/2 cup bbq across top of each potato.
Top each bbq topped potato with 1/4 cheese.
Sprinkle with 1 slice crumbled bacon.
Bake potatoes 15 minutes or until heated through and cheese is melted and bubbly.
