Texas Style Southwest Chicken #foodbloggers4tx

This super easy to make Texas style southwestern chicken recipe is one of those really versatile recipes that makes dinner so easy.
Southwest Chicken with black beans and salsa

You can make this as a dump and go crock pot recipe as you dash out the door during the day, or you can bake it in the oven too.

I also like that you can turn this into a freezer meal and dump it straight into your crockpot to cook!


With just a few ingredients, it is a budget friendly meal that does not taste budget!
Just serve it with some rice on the side and dinner is ready!
I swap out Chicken thighs for breasts sometimes too!
Not a fan of black beans? Just grab some pinto beans instead!

Serve the chicken whole.. or, my familes fav.. dice/shred up the cooked chicken and mix it back into the pan. Serve it over cooked rice as a Tex Mex Bowl. SO GOOD!

Texas Style Southwest Chicken
Chicken with Salsa ,Black beans, and Corn served over a bed of rice, is a restaurant worthy dish you can make in a slow cooker or bake in the oven!
Ingredients
  • 4-6 (1 per person) Chicken breasts
  • 1 (16 oz) can Black Beans, drained and rinsed
  • 1 (16 oz) can Corn, drained
  • 12 oz jar Salsa or can of tomatoes w/ Green chiles,drained
Instructions
Crock Pot Directions:

Place thawed or frozen chicken breasts in bottom of crock pot.
Dump drained beans and corn over chicken. Top with salsa or tomatoes.
Cook on High 3 4 hours or low 5-6 until chicken is cooked completely.

For Baking In Oven:
Layer all ingredients in a baking dish.
Bake 350° for 1 hour until chicken is cooked through

It's Personal For Me:  I have a brother and his family living down there. They lost their home and farm in the floods about a year and half ago and were still trying to rebuild when the hurricane came through again. They are all safe sound and working hard to help their neighbors as well as continue to rebuild themselves. So I know how much work is ahead of everyone down there, when I say they had NOTHING, I mean it!

  3. I'm so sorry that your family has suffered. I love Houston and visited very frequently years ago. It broke my heart to see the suffering. I hope they can get back to some semblance of normalcy soon. <3

  4. I hope your family is recovering and so sorry to hear they have had to cope with this disaster. All my friends in the Houston-area are OK but also in the process of rebuilding. Your chicken dinner is definitely the perfect comfort food for all our families.
