Fiesta Corn Dip

Also known as Robert's Corn Dip, this spicy, creamy dip is a fun one to take to any party. It is meant to be made 1 -2 days ahead to give all the flavors time to meld and develop into it's best yumminess.

It can be baked and served warm or the orginal way, uncooked and served chilled.
This made TONS! so you'll have plenty for a big party.

Fiesta Corn Dip

3 (11 oz each) cans Mexican Style corn
1 (7 oz) can chopped green chili's drained
1 (6 0z) can chopped jalepeno's darined
1/2 cup chopped green onions
1 cup mayonnaise
1 cup sour cream
16 oz bag shrdded cheddar cheese.


  • Mix all ingredients.
  • Chill covered in refrigerator for 1-2 days prior to serving.
  • May serve as is,  or you can bake it in a casserole dish at 350° for 20 min till hot and bubbly. 
  • Serve with corn chips
