Scalloped Potato Pantry Kits

Making your own version of a convenience box of scalloped potatoes will let you control the ingredients, while still enjoying the convenience of a n easy to make side dish on a busy night.

It will start with dehydrating potatoes.

I will give you both oven and dehydrator directions:

Potatoes: about 3-4 medium sized per "Kit"

I don't peel my potatoes, but peel yours first if you wish.
Boil potatoes for about 8 minutes
Drain from water and place in ice water. till cold.
You can also put these potatoes in the fridge for several hours or overnight.
Slice, shred or dice cold potatoes as desired. (I sliced mine  about 1/8 inch thick)

Oven Directions:
Turn oven on to lowest temperature setting.
Keep oven door ajar during the drying process.
Lightly spray cookie sheets with non stick spray.
Lay potatoes slices in a single layer.
Put cookie sheets into oven and place in oven.
After 1 hour turn slices over, and repeat every 30 minutes or so. Drying time will depend on the oven and thickness of potatoes, but generally will be done in about 3 hours. They should be brittle and translucent.

Dehydrator Directions:
Spray drying racks with non stick spray.
Lay potatoes in single layers.
Dry at lowest setting approx. 10-12 hours till they are brittle and translucent

Let the dried potatoes cool thoroughly, then store for up to a year in glass or plastic jars OR plastic bags at room temperature in a cool, dry place.

Scalloped Potato Kits:
Start by mixing up the Basic Sauce Mix

(this is enough for one kit)
2 Tablespons dry milk powder
2 Tablespoons flour
2 Tablespoons cornstarch
1 teaspoon  onion powder
1/8 teaspoon black pepper

Combine all ingredients and store in a ziplock bag. 

In a mason jar or airtight container/bag 
3 cups dehyrdated potatoes
To the  ziplock baggie of sauce mix above add in an addtional 1/3 cup powdered milk.
Store ziplock bag (let all the air out) on top of potatoes in jar.
Seal jar.

Here is how to cook up the Scalloped potatoes:

Making Scalloped Potatoes:
3 Tablespoons Butter 
2 3/4 cups boiling water

Pour potatoes into ungreased casserole dish. 
Sprinkle sauce packet mix on top. 
Dot with butter.
Stir in boiling water.
Bake at 400°for 30 minutes until tender.

Beef and Potatoes Skillet Meal:
3 cups dehydrated Potatoes
1/3 cup Nonfat Dry Milk
1 package (6 Tbsp.) Sauce Mix
1 tsp. Beef Bouillon Granules

To Make a Beef and Potatoes Skillet Meal (like hamburger helper)
Brown 1 lb ground beef in skillet. Drain off excess fat.
Stir in 2 3/4 cups water, sauce packet 1/3 cup powdered milk, 1 teaspoon beef bouillon (1 cube).
Heat to boiling, then reduce heat, cover and simmer. Stir once in ahile for about 25 minutes till potatoes are cooked and tender.
