Slow Cooker Beef Minestrone

Soup Recipe
Slow Cooker Beef Minestrone is a perfect fall soup to throw together for dinner as you dash out the door, and is so hearty and filling! Will warm you up on a chilly evening! It freezes well also, so perfect to pack away for another meal!

This one needs just 20 minutes once your home to stir in the pasta to finish cooking, but while you're doing that, pop some biscuits in the oven, and go put on some warm, cozy jammies and slippers. By the time you get back, dinner is ready!

I love freezing the extra, but my hubby ends up taking it in small containers for lunch alot, so I'm lucky if I get to pack the extra away!

Go ahead.. cozy on up to this classic soup!
