I recently made a batch of these to send up to my Niece's children, while she was in the hospital recovering from surgery. They are young, and like most young children, they find some foods challenging to eat. So sending homemade meals that they will enjoy and be nutritious can be quite difficult! I made them some fruit smoothies in small portable jars, as well as these fun and delicious chocolate pumpkin waffles. I sent along whip cream, extra chocolate chips and chocolate syrup drizzle too just for fun!

I love that there are so many healthier options in these waffles, yet they sound so decadent! from the pumpkin puree, that adds so much moistness, as well as fiber, potassium, and vitamin c to whole wheat flour that adds tons of vitamins and minerals as well as another good source of fiber. You can choose the type of oil (I like coconut oil but you can use any kind you want even butter), and the sugar??  you can completely leave out the little bit of sugar if you'd like too!  Play around with this recipe a bit!

These are easy to freeze after you make them also and re-toast them for a quick breakfast on a busy morning too!

Healthy Chocolate Pumpkin Waffles

Fun, chocolaty waffles that are packed full of healthy ingredients that no one will ever know are in there! Everyone will be asking for more!

  • I cup whole wheat flour
  • 1/2 cup all purpose flour or use all whole wheat flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder
  • 1/4 cup brown sugar
  • 1/4 cup oil (coconut (melted)  or canola or even melted butter)
  • 2 eggs 
  • 1 3/4 cup milk
  • 1 cup pumpkin puree
  • 1 tsp. vanilla
  • optional : 1 cup chocolate chips


How to cook Healthy Chocolate Pumpkin Waffles

  1. In Mixing bowl mix together brown sugar and oil of your choice. Add in egg, milk and pumpkin, whisking to blend well. 
  2. In a separate bowl mix together flour, baking powder, baking soda, salt, cocoa powder.
  3. Add dry ingredients to the wet ingredients, mixing just until blended. Add in chocolate chips.
  4. In a hot prepared waffle iron:
  5. For a square iron, use 1/4 cup batter per square, 
  6. For a round Belgian waffle use 1/2 cup - 2/3 cup batter depending on size of your Iron. Cook according to your waffle Iron. Mine took about 4 minutes, but time varies.
